Pistachio Date Bliss Balls
Rich, nourishing and deeply satisfying — these soft energy balls combine sweet dates, creamy cashews and crunchy salted pistachios into a decadent superfood treat. Perfect as a healthy dessert, post-workout snack or even a small nourishing meal.
Ingredients
- 150 g soft Medjool dates
- 100 g roasted salted pistachios
- 50 g cashews and/or cacao nibs
- 1 tbsp raw honey or maple syrup
- 1 vanilla bean
- A pinch of sea salt
Chocolate Coating
- 200 g melted Almarte ceremonial cacao or dark chocolate
Preparation
- Add dates, pistachios, cashews and cacao nibs into a food processor.
- Blend until the mixture becomes sticky and slightly chunky.
- Add honey, vanilla and sea salt.
- Blend again until a rich dough forms.
- Roll the mixture into medium-sized balls with your hands and place them on a plate.
- Melt the ceremonial cacao or chocolate gently over a water bath.
- Using a fork, dip each ball into the melted chocolate until fully coated.
- Place the coated balls onto baking paper on a plate or tray.
- Sprinkle with crushed pistachios if desired.
- Put the tray into the refrigerator for 20–30 minutes until the shell becomes firm.

- For more richness: add almond pieces or extra cacao nibs
- For extra softness: add a spoon of coconut cream
- For a more luxurious flavor: add a small splash of rum aroma or extra vanilla
- For more protein: mix in hemp seeds or protein powder
